Instant coffee – Freeze-dried coffee – Powdered coffee: History, characteristics and production methods
Instant coffee, also known as freeze-dried coffee or powdered coffee, has a history dating back to the late 19th century. The earliest forms of instant coffee were developed in the 1890s, but it was not until the 1930s that instant coffee became popular thanks to technological advances and commercialisation.
One of the most groundbreaking innovations came from Japanese researcher Satori Kato, who patented a method for producing coffee powder in 1901. However, it was George Washington (not to be confused with the President of the United States president) who launched the first commercially available instant coffee in the United States in 1909. However, the real breakthrough for instant coffee came in the 1930s when the Swiss company Nestlé, in collaboration with the Brazilian government, developed Nescafé. This quickly became popular during the Second World War, when American soldiers used it because of its simplicity and long shelf life. After the war, instant coffee's popularity increased worldwide.
Instant coffee is characterised by its simple and quick preparation. It only needs to be dissolved in hot water to create a cup of coffee, making it extremely convenient for those who want coffee quickly without having to brew it. Instant coffee can vary in taste and quality depending on the manufacturing method and the origin of the beans. There are two main types of instant coffee: spray-dried and freeze-dried. Spray-dried coffee has a finer texture, while freeze-dried coffee usually has larger, crystal-like particles that tend to give a richer flavour. There are two main methods for producing instant coffee: spray drying and freeze drying. Spray drying: This is the oldest and most economical method. Here, the coffee is first brewed in the usual way, after which it is sprayed through a fine mist into a hot air stream. The water evaporates quickly, leaving behind small powdery particles. Freeze drying: In this method, the coffee is also brewed first, but instead of drying it with heat, the coffee is quickly frozen. The frozen coffee is then vacuum dried, which removes the water through sublimation, leaving freeze-dried coffee granules. Freeze drying is considered to preserve more of the coffee's original flavour and aroma.
Nescafé, launched in 1938 by Nestlé, is one of the most famous instant coffee brands globally. Originally developed as a way to deal with the surplus of coffee in Brazil, Nescafé quickly became popular and has since been a leading player in the instant coffee market.
Another big name in instant coffee is Maxwell House, an American brand that has been around since 1892. Maxwell House introduced its instant coffee in the 1950s, which became very popular in the United States in the decades that followed.
Taster's Choice. Launched by Nestlé in 1966, it is known for its premium instant coffee. Taster's Choice is manufactured using the freeze-drying method, which gives it a richer flavour profile compared to many other brands. A British brand offering both spray-dried and freeze-dried coffee. Founded in 1923, Kenco is popular in the United Kingdom and has a strong commitment to sustainability in its coffee production. Instant coffee has undergone an impressive journey from its humble beginnings to becoming one of the most popular ways to drink coffee globally.
