The coffee is grown at Santa Isabel in Cobán, Guatemala, a region known for its unique microclimate and annual rainfall of 3,500 mm. This climate requires careful pruning of the coffee trees to prevent fungal diseases, making harvesting a particularly labour-intensive process. The coffee berries ripen in batches, which means that pickers sometimes visit the same tree up to ten times to harvest the very best berries. After harvesting, the berries are fermented for up to 48 hours before being rinsed and soaked in clean water. Drying takes place first outdoors for a few days and then in well-ventilated greenhouses, where each batch is carefully monitored to achieve an optimal moisture level. Santa Isabel has been owned by the Valdés family since 1960, when Don Luis Valdés bought back the farm that was first acquired in 1875. Since then, his son, Luis "Wicho" Valdés, has run the farm with a combination of tradition and innovative agronomy. Wicho has introduced methods that reduce the use of pesticides and fertilisers, and the farm has set aside a third of its land to protect biodiversity.
